Bagels for all

Much like pretzels, I have never understood the appeal of sweet bagels, which is what many cafes across America consider to be the gold standard. Doughnuts exist for a reason people. Since my father took up baking as a way to defend our family from dull breakfasts, he’s been given many an opportunity to hone his craft. First was baguette, then sourdough, followed by pretzels, and finally bagels. Bagels are no doubt easier to make than pretzels, meaning less time, and more importantly, less profanity. These circular hollow rolls have given both us and our immediate friends a good way to enjoy breakfast, and I while I prefer to eat them plain, many have seen them as phenomenal bread-based pillows on which many condiments, be they sweet or salty, may rest their heads.
